My Favorite Pumpkin Pie

With Thanksgiving literally right around the corner, I've started collecting some ingredients for the things I'll be bringing to our Friends-Giving which is going to be about 30 people, all of which are fabulous, and I can't wait.


Whilst at Target today, I went to grab some pureed pumpkin in a can, you know, for pumpkin pie, and mistakenly picked up "Pumpkin Pie Mix". As in, pre-mixed pumpkin pie filling in a can.

I. Was. Appalled.

I mean, I know not everyone is a cook, or can bake, but please please don't get your pumpkin pie from a can. I mean, it's one thing to get the can of pureed pumpkin, but when you check out my recipe for pumpkin pie below, you'll regret getting the premixed stuff (it's that easy).  Check it out:

Pumpkin Pie

1 - can pureed pumpkin
1 - can sweetened condensed milk
2 - eggs
1 - tsp cinnamon
1/2 tsp - ginger
1/2 tsp - nutmeg
1/2 tsp - salt
Pie Crust


1. In a bowl, combine all ingredients. Mix well.
2. Place crust into a pie plate.
3. Pour mixture into crust.
4. Bake at 425 degrees for 15 minutes. Reduce heat to 350 degrees.
5. Bake for 30 - 40 minutes longer, or until a knife inserted comes out clean.


Et Voila!

I get compliments on this every year. It's really a great pumpkin pie, and incredibly easy to make (especially if you cheat on the crust, like I do). Let me know how it comes out!
